PRINCIPATO Cisterna d’Asti doc Superiore

Pope Clemente X, on 10h November 1670, assigned the title of Princedom to the territory of Cisterna d’Asti and, in 1673, the Pope authorized Giacomo dal Pozzo, “Prince of Cisterna and Belriguardo”, to mint coins with the name of the Prince and the emblem of the Holy See.
Honoring this extraordinary past, the Vaudano Enrico e Figli winery, wine-producers for three generations in Cisterna d’Asti, presents its latest creation: “Principato” Cisterna d’Asti Doc Superiore.
Principato is a premium red wine, produced in small quantities, obtained from a single vineyard placed in “Roche”, a south-facing side among the most vocated crus of Cisterna. It is produced with the technique of “double fermentation”: 30% of Croatina grapes over-ripened for 25-30 days are added to the traditionally vinified wine that is finishing fermentation which is therefore particularly prolonged. This is followed by aging of about 12 months in French oak barrels and 4 months of bottle. The color is an intense ruby red, the scent of ripe red fruit with slight spiciness and balsamic aroma and, on the palate, you appreciate the fullness and character derived from silky tannins and long persistence. Tasting at a temperature of 20-22 °C and pairing with stewed or roasted red meat, game and long-aged cheeses.
